Classic Fraisier

A heart-shaped fraisier made with soft génoise sponge, fresh strawberries, and crème diplomate (a smooth blend of pastry cream and whipped cream) instead of traditional crème mousseline for a lighter finish.
The cake is topped with a smooth strawberry glaze, creating a clean, glossy finish with a bright strawberry flavour that balances the cream beautifully.

Serves: 6–8

Chocolate & Pistachio Fraisier

A heart-shaped fraisier featuring a rich yet balanced combination of chocolate and pistachio, layered with fresh strawberries.
Light chocolate génoise is filled with pistachio spread mixed with feuilletine flakes for added crunch, followed by a smooth dark chocolate whipped ganache.
Finished with a glossy dark chocolate glaze on top for a bold, indulgent finish.
